Abstract

本发明涉及一种鱼鳞胶原蛋白的生产方法,其选用优质的鱼鳞作原料,进行前处理,去掉鱼鳞表面的粘稠物质及其他杂质,而后干燥去醒,接着采用酸碱法进行脱灰、脱脂,脱灰、脱脂后进行高压催化蒸解,提炼液体状的出低分子的蛋白肽鱼鳞胶原蛋白产品。本发明充分利用了水产资源,将鱼鳞废弃物变废为宝,既减少了对环境的污染,又从根本上保证了胶原蛋白的品质;生产工艺简单,操作性强,成本低。用其做原料,可以加工制作各种营养液和保健食品,非常利于人体吸收。

Description

鱼鳞胶原蛋白的生产方法

技术领域

本发明涉及一种食品的生产方法,具体讲是一种鱼鳞胶原蛋白的生产方法。

背景技术

我们知道,胶原产品虽被广泛应用于化妆品行业、医疗行业,但在食品 行业的应用很少。迄今为止,几乎所有的胶原蛋白都是来自陆地生动物的皮 和骨。但是最近由于在欧州的流行的传染性极强的疯牛病等传染病,人们对 从这些陆地生动物中提取的胶原蛋白的安全性提出了质疑。在加上动物保护 的霈要,胶原产品的来源受限。而鱼鳞中含有丰富的胶原蛋白,该类胶原中 含有多种氨基酸,能提高人体细胞营养,促进皮肤和骨骼组织的新陈代谢, 增强皮肤弹力,使皮肤润滑细腻,另外对预防骨质疏松症和风湿性关节炎、 提高人体免役力、增强生命活力具有良好的作用。但鱼鳞中的营养成分一直 被人们所遗忘,国内,大量的可利用的鱼鳞被当作垃圾处理,不但没有充分 利用鱼鳞的价值,而且还污染环境。 发明内容

本发明所要解决的技术问题是克服上述现有技术的不足,提供一种工艺 简单,操作性强,成本低,可充分利用水产加工业的鱼鳞下脚料,变废为宝 的鱼鳞胶原蛋白的生产方法,进而将其加工成人类可以食用的蕾养及保健食

本发明解决上述技术问题采用的技术方案是:一种鱼鳞胶原蛋白的生产

方法,其特征是:

a. 采用优质的鱼鳞作原料,在2%~8%的盐水中浸泡10-20分钟,搅拌、 洗涤,去掉鱼鳞表面的粘稠物质及其他杂质;

b. 干燥,将鱼鳞自然晒干,直到含水量小于15%,晒干后去掉杂质及不 清洁的鱼鳞,贮存备用;

c. 脱脂,将上述鱼鳞放入塑料容器中,用水浸泡,加入1~3%鱼鳞重量 的碳酸氢钠,搅拌,除去鱼鳞中的脂类物质,过滤冲洗; d. 脱灰,将上述鱼鳞加入容器中,加水瀵泡,而后加入50~75%鱼解重 量的稀盐酸,拨拌,直至无泡沫产生为止,脱去鱼鳞中的灰分,用水冲洗, 并加入碳酸氢钠中和,将PH控制在5〜5.5;

e. 催化蒸煮,将加入适l:羟基磷灰石的水煮沸,再将上述鱼鳞放入锅内 继续蒸煮,提炼出鱼SI胶原蛋白,直到鱼鳞胶原蛋白的浓度达到8〜20%时停 止加热,过滤除去不溶物质;

f. 高温高压蒸解,过滤后的鱼鳞胶原蛋白溶液装入离压锅内,高温高压 下蒸解2〜5小时,静置3〜8小时,过滤,得液体鱼麟胶尿蛋白产品。

本发明由于采用酸械法脱灰脱脂,高温高压催化蒸解,得到便于包装、 储存,易于饮食、吸收的液体状鱼鳞胶原蛋白产品,具有固有的的色、香、 味营养成分。该产品作原料可以用来加工制作各种奢养液和保健食品。 具体实施方式

下面结合实施例对本发明做进一步说明。

实施例l: 一种鱼鍵胶原蛋白的生产方法,其具体步骤是:

a. 首先,选料并进行前处理,采用优质的鱼鳞作原料,鱼鱗可以是淡水 鱼戒海水鱼的鱼籌,在3外的盐水中漫泡12分钟,不断攙拌,去撺鱼鱗表面 的粘稠物质及其他杂质,洗涤、沥水。

b. 干燥,将上述鱼麟自然晒干,直到含水量小于15%,主要目的去掉鱼

鳞臞味、更便于贮存,晒干后去掉杂质及不淸洁的鱼鳞,贮存备用。

c. 脱脂,选出上述鱼鳞100千克(以100千克鱼鳞为例,以下同)加入 塑料容器中,加水浸泡,加入1.5千克的康酸氣钠,推拌,除去鱼鑽中的脂 类物质,过滤冲洗。该过程去除了鱼麟中的脂类物质。

d. 脱灰,将上述鱼鳞加入容器中,加水漫泡,而后加入50千克的稀盐 酸,立即搅拌,直至无泡沫产生为止,脱去鱼解中的灰分,用水冲洗,并加 入碳酸氢钠中和,将PH控制在5〜5.5。

e. 高温催化蒸煮,将加入适量羟基磷灰石的水意沸,将上述脱灰、脱簾 的鱼鳞放入蒸漱锅内继续蒸煮,羟基稱灰石做催化剂,熬錄出鱼麟胶原蛋白, 用浓度计測定鱼麟胶原蛋白的浓度,可每隔十分钟一澜,直到feii胶原蛋白 的浓度达到10%时停止加热,过滤,得液态大分子鱼鳞胶原蛋白,过滤,除

去不溶物质。

f.高温高压蒸解,过滤后液体装入高压锅内,高温高压下蒸解3.5小时, 使胶状大分子鱼鳞胶原蛋白断链,分解成低分子的蛋白肽,最后蒸解成液体 状的鱼鳞胶原蛋白产品,蒸解压力为1.1个大气压,温度为112°C,静置6 个小时后,过滤,除去杂质,得液体鱼鳞胶原蛋白产品。

实施例2: —种鱼鳞胶原蛋白的生产方法,其具体步骤是:

a. 首先,选料并进行前处理,采用优质的鱼鳞作原料,鱼鳞可以是淡水 鱼或海水鱼的鱼鳞,在5%的盐水中浸泡15分钟,不断推拌,去掉鱼鱗表面 的粘稠物质及其他杂质,洗涤、沥水。

b. 干燥,将上述鱼鳞自然晒干,直到含水量小于15%,主要目的去掉鱼 鳞腥味、更便于贮存,晒干后去掉杂质及不清洁的鱼鳞,贮存备用。

c. 脱脂,选出上述鱼鱗100千克(以IOO千克鱼鳞为例,以下同)加入 塑料容器中,加水浸泡,加入3千克的碳酸氢钠,搅拌,除去鱼鳞中的脂类 物质,过滤冲洗。该过程去除了鱼鳞中的脂类物质。

d. 脱灰,将上述鱼鳞加入容器中,加水浸泡,而后加入65千克的稀盐 酸,立即搅拌,直至无泡沫产生为止,脱去鱼鳞中的灰分,用水冲洗,并加 入碳酸氢钠中和,将PH控制在5〜5.5。

e. 高温催化蒸煮,将加入适量羟基碟灰石的水煮沸,将上述脱灰、贜簾 的鱼鳞放入蒸煮锅内继续蒸煮,羟基磷灰石做催化剂,熬炼出鱼鳞胶原蛋白, 用浓度计测定鱼鱗胶原蛋白的浓度,可每隔十分钟一测,直到鱼鳞胶原蛋白 的浓度达到14%时停止加热,过滤,得液态大分子鱼鳞胶原蛋白,过滤,除 去不溶物质。

f.高温高压蒸解,过滤后液体装入高压锅内,高温高压下蒸解3.5小时, 使胶状大分子鱼鱗胶原蛋白断链,分解成低分子的蛋白肽,最后蒸解成液体 状的鱼鳞胶原蛋白产品,蒸解压力为1.2个大气压,温度为115'C,静置4 个小时后,过滤,除去杂质,得液体鱼鳞胶原蛋白产品。

本发明蒸解后的鱼鳞胶原产品,用自动装填机装入棕色玻璃瓶中,并

在120X:条件进行商濂杀菌。用其做屎料,可以加工制作各种蕾养液和«#食品。

本发明的鱼鳞胶原蛋白产品生产方法的优点在于:充分利用了水产资源, 将鱼鳞废弃物变废为宝,既减少了对环境的污染,又从根本上保证了胶原蛋 白的品质;生产过程中,采甩酸碱法脱灰脱脂,有效去除了糖类和脂类成分; 高温高压催化蒸解,胶原蛋白最终被分解成低分子的蛋白肽,非常利于人体 吸收;工艺简单,操作性强,成本低。

Claims (1)

1.一种鱼鳞胶原蛋白的生产方法,其特征是: a.采用优质的鱼鳞作原料,在2%~8%的盐水中浸泡10-20分钟,搅拌、洗涤,去掉鱼鳞表面的粘稠物质及其他杂质; b.干燥,将鱼鳞自然晒干,直到含水量小于15%,晒干后去掉杂质及不清洁的鱼鳞,贮存备用; c.脱脂,将上述鱼鳞放入塑料容器中,用水浸泡,加入1~3%鱼鳞重量的碳酸氢钠,搅拌,除去鱼鳞中的脂类物质,过滤冲洗; d.脱灰,将上述鱼鳞加入容器中,加水浸泡,而后加入50~75%鱼鳞重量的稀盐酸,搅拌,直至无泡沫产生为止,脱去鱼鳞中的灰分,用水冲洗,并加入碳酸氢钠中和,将PH控制在5~5.5; e.催化蒸煮,将加入羟基磷灰石的水煮沸,再将上述鱼鳞放入锅内继续蒸煮,提炼出鱼鳞胶原蛋白,直到鱼鳞胶原蛋白的浓度达到8~20%时停止加热,过滤除去不溶物质; f.高温高压蒸解,过滤后的鱼鳞胶原蛋白溶液装入高压锅内,高温高压下蒸解2~5小时,静置3~8小时,过滤,得液体鱼鳞胶原蛋白产品。
